EveryTrail
EveryTrail is designed to share your GPS tracks with others, including photos, and allows you to download the tracks that others have uploaded (including date and time information, so if you are paranoid, be careful what you upload). That allows you to re-use the tracks others have uploaded to do similar trips yourself. As it grows, it should be good for finding new routes.
OpenStreetMap
OpenStreetMap is a great site for maps that you can download in raster format and is completely free. There is some excellent mapping data on their (and some big gaps). It is the equivalent of Wikipedia for mapping. You can help map using your Mac and GPS data, or just using your Mac and potentially other people's GPS data or any other non-copyrighted or compatibly-copyrighted site (such as public land data in France from the government). The maps are particularly good for walking and cycling in areas where they are well-described.
You can also download vector data if you have it in the right format for your usage. Garmin is well-supported for this, and you can upload the maps to your Garmin using your Mac (in versions that are basic, routable, with or without contours, and if you are good, you can lay the map out in a version that you like yourself, but that is fairly long-winded).

Trailguru
Trailguru is a web site used for tracking different activities you have recorded using GPS data. It primarily uses GPX and Garmin formats for data uploading (which are simple to obtain on your Mac from many sources). It gives you the capability to record all your tracks and also gives you statistical data on the trips, so it is useful for tracking exercise (skiing, running, walking, cycling, even swimming, etc.). It is also supposed to allow you to create routes that others can follow, but this seems to try to track along roads only, so not so good for runners. Apparently it wants to track over averaged GPS tracks, but this doesn't seem to be too successful in its current incarnation. You can download other people's public tracks to use yourself (it won't allow you to download their time and date information on the tracks you download).
